White Bean Chicken Chili
This is an easy dinner - especially with leftover chicken.

  1. 2 t. oil
  2. 1 onion
  3. 2 garlic cloves
  4. 6 oz verde sauce
  5. 1 1/2 t. cumin
  6. 3/4 t. oregano
  7. 3/4 t. cayenne
  8. 20 oz chicken broth
  9. 2 c. shredded (or chunk) cooked chicken
  10. 2 cans of navy or cannellini beans (drained)
  1. sour cream
  2. shredded cheese
  1. Saute the onion and garlic in oil. Add all the contents to a medium sauce pan and cook on low medium heat for 20 minutes.
  2. We like to serve this with cornbread too - like regular chili.
  1. I used to use a flavor packet that I bought at the store to season white bean chili. The kids never ate it because it was too spicy. I would add sour cream or cottage cheese to lighten the intensity for me, but Brent liked it as it was. In order to make a meal we could all eat, I started with a recipe I found on the internet and added some things that sounded good to me. I probably will still adjust this one as we use it more, but we all liked it as it is.
